Milk Cake (Alwar ka Mawa)

A rich, fudgy Indian milk sweet made by slowly reducing milk until it caramelises into soft, cardamom-scented squares.

Ingredients

  • 1 l full-fat milk
  • 100 g sugar
  • 2 tbsp ghee
  • 1 pc lemon
  • 0.5 tsp cardamom powder
  • 20 g pistachios

How to

  1. 1Pour the milk into a heavy, wide pan and bring it to a gentle boil over medium heat.
  2. 2Reduce the heat and simmer, stirring and scraping the sides often, until the milk has reduced by roughly half and thickened.
  3. 3Squeeze in the lemon juice a little at a time; the milk will curdle and the solids will begin to separate.
  4. 4Keep cooking on low heat, stirring constantly, until the mixture thickens and starts to pull away from the sides of the pan.
  5. 5Add the sugar and ghee and cook until the sugar dissolves and the mix turns glossy and light golden.
  6. 6Stir in the cardamom powder, then pour the mixture into a greased tray and level the surface.
  7. 7Let it cool to room temperature, then chill until firm enough to cut into neat squares.
  8. 8Garnish with chopped pistachios before serving.

Tips

  • Best made a day ahead — the texture sets beautifully overnight and the flavours deepen.
